Overview

The Brabender ViscoQuick is a compact digital torque viscometer with an integrated PC, touchscreen and a Peltier temperature control system. It is described as 25 % faster than comparable devices and up to 80 % faster than predecessor instruments, with heating and cooling rates of +20 °C / -15 °C per minute that enable measuring tasks such as starch gelatinization below 10 minutes. The ViscoQuick supports rheological determination at temperatures below 20 °C and can cool samples to consumption or refrigeration temperatures to provide closer-to-reality rheological characteristics and support assessment of texture maintenance. Real-time dosing during measurements enables immediate insight into the effects of added substances, and MetaBridge allows real-time monitoring of starch quality using a reference curve with automatic feedback on whether specifications have been met, comparison of multiple measurements via the correlations add-on, and export or distribution of results (including to LIMS, ERP or by email).
